Winter Sweet (Cucurbita maxima)


Winter Sweet is a lovely gray hybrid kabocha weighing in anywhere from 2-5 pounds. As is true for most kabochas, it's flesh is deep orange with a rich flavor and flaky texture.

Bred by Rob Johnston of Johnny's Seeds, Winter Sweet truly brings the WINTER back into winter squash! This is a squash you DO NOT WANT TO EAT in September (or October or early November); Winter Sweet needs to ripen during those fall months. But the wait is well worth it, as Winter Sweet is incredibly delicious from December through March. And like Tetsukabuto, this squash is not going to rot on your counter, but it will turn color - from grey to salmon pink - as it ripens, letting you know that the winter is indeed passing into spring.
